It's a humble yet generous ingredient, bringing warmth and lightness during the cold months. Preparing it becomes an act of awareness: choosing local and seasonal products reduces environmental impact and gives us authentic, unadulterated flavor.

This recipe is designed for four people and follows the slow pace of a kitchen that takes care of time and details.

Ingredients for 4 people

- 320 g of Carnaroli rice (preferably from sustainable cultivation)

- 400 g of Mantua or Delica pumpkin, cleaned and cut into cubes

- 1 small golden onion

- 1 sprig of fresh rosemary

- 3 tablespoons of organic extra virgin olive oil

- 1 liter of vegetable broth (made with seasonal vegetable scraps)

- Salt and pepper to taste

- 2 tablespoons nutritional yeast flakes (vegetable alternative to cheese, optional)

Preparation

We start slowly, preparing a vegetable broth with celery, carrot, and onion peels and scraps: nothing goes to waste, and what would usually end up in the trash becomes a fragrant base for our dish.

Heat the oil in a large saucepan, add the finely chopped onion, and let it soften gently until translucent. Now add the pumpkin, which in a few minutes releases its vibrant color and delicate sweetness.

Add the rice and let it toast, stirring constantly, to capture the aromas and prepare to slowly absorb the hot broth, which will be added one ladle at a time. The secret to risotto lies precisely here: patience. As the rice cooks, the rosemary releases its resinous aroma, balancing the sweetness of the pumpkin. In about 18 minutes, the dish is ready: creamy, enveloping, without the need for butter or Parmesan cheese, because the pumpkin naturally provides the velvety texture that makes this risotto a sustainable comfort food.

If you want an extra kick, nutritional yeast will add slightly savory and aromatic notes.

Plating

To enhance the dish's beauty, we recommend serving it in white or cream-colored soup plates, so that the pumpkin's intense orange color stands out.
